A\u00f1adir la mantequilla (100gr), cortada en dados y muy fr\u00eda. Integrar con los dedos y obtener una mezcla que asemeje migas, a\u00f1adir un par de cucharadas de agua helada y el huevo ligeramente batido, trabajar hasta obtener una pelota. Extender la masa con un rodillo sobre una superficie enharinada hasta formar una circunferencia de unos 3 mm de grosor. Enrollamos sobre el rodillo para poderla levantar y la pasamos al molde, ajust\u00e1ndola a los bordes. Cortamos la masa que sobresalga. La dejamos reposar en el frigor\u00edfico una media hora.<\/p>\n\n<p>Cortar a continuaci\u00f3n una circunferencia de papel parafinado 3 cm m\u00e1s ancha que el molde donde se va a hornear la masa quebrada, la arrugamos formando una bola para ablandarla y volvemos a abrirla. Colocamos el papel en el interior, de manera que salga por los lados. Rellenamos con alubias secas para evitar que se formen burbujas al cocer la pasta, apretando con suavidad. Disponer el molde en una bandeja o rejilla y realizar programaci\u00f3n manual convecci\u00f3n:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>180\u00ba C<\/li>\n<li>humedad 0%<\/li>\n<li>ventilador 6<\/li>\n<li>10-15 minutos<\/li>\n<\/ul>\n\n<p>Sacar las alubias, retirar el papel de horno. Verter el vino y lo dejamos cocer todo hasta que el l\u00edquido se haya evaporado y la cebolla quede blanda. Sazonar con sal y pimienta. A\u00f1adir las espinacas y rehogamos todo a fuego vivo removiendo constantemente hasta que las espinacas est\u00e9n completamente secas y no suelten l\u00edquido. Reservar. Mezclamos cuatro huevos batidos con el queso rallado, la nata y aromatizamos con nuez moscada. Incorporar las verduras sobre la mezcla anterior y unificar correctamente. Verter el contenido de nuestra mezcla sobre la masa dispuesta en el molde correspondiente.<\/p>\n<p><!-- \/wp:paragraph --><!-- wp:paragraph --><\/p>\n<p>Disponer el molde en una bandeja y realizar En un primer momento, llevaba huevos, leche o nata y masa quebrada. A partir del siglo XIX se incorporaron otros ingredientes como la panceta y las verduras, que hoy en d\u00eda siguen siendo imprescindibles en la famosa<em> quiche lorraine<\/em>.<\/p>\n<p>\u00a0<\/p>\n<p><strong>Curiosidades acerca de esta receta<\/strong><\/p>\n<p>La palabra quiche<strong> proviene de <em>k\u00fcchen <\/em><\/strong>(pastel en el dialecto que se hablaba en Alsacia y en Estrasburgo). Que sea salado es una innovaci\u00f3n francesa. La receta original tambi\u00e9n lleva masa quebrada como base, una crema pastelera y frutos rojos o manzanas, entre otros ingredientes.<br \/><br \/>El cambio para probar otros sabores sirvi\u00f3 para aprovechar mejor lo que los cocineros usaban a diario y no quer\u00edan desaprovechar. Asimismo, la evoluci\u00f3n de la receta est\u00e1 m\u00e1s provocada por la adici\u00f3n de nuevos ingredientes y no por incorporar elementos, como las especias, que pudieran cambiar el sabor original.<\/p>\n<p>\u00a0<\/p>\n<p><strong>\u00bfTiene importancia el <em>chef<\/em> que prepare la receta?<\/strong><\/p>\n<p>S\u00ed, porque hay algunos que prefieren a\u00f1adir solo leche y otros solo nata. La de espinacas y queso azul incluso permite emplear menos cantidad de l\u00e1cteos al tratarse de un queso que al fundirse aporta una textura ideal. No en vano, esta variante de la receta original ha conseguido convertirse en una de las favoritas de aquellos que prefieren una opci\u00f3n m\u00e1s ligera y sin demasiada grasa.<br \/><br \/>El aporte cal\u00f3rico de esta receta es de unas <strong>280 calor\u00edas por cada 100 gramos<\/strong>.
